6 - Smokehouses & Hardware (Smokin’ Savvy)

What's the secret for producing good, consistent smoke for long periods of time? (Chuckwagon burns our breakfast every day, on the trail drives, but that doesn't count.)
What about handling meats during smoking? What are good brands of smokers? How do you control the dang ornery things? Have you smoked a ham for multiple days or weeks?

"Inquiring Minds" want to know. Please write about these and similar topics. We'll be glad you did.

  1. I'm still amazed at the performance of my "Amazin'" smoke generator, as compared with all the various chip feeder schemes. Mine is the perforated tubular version, rather than the flat perforated plate "maze" type. It's about a foot long. I load if full of chips, start the top pellets burning with a blowtorch, and get about 8 hours of continuous smoke! ...best I ever did with chips was 2 hours, and that was on a rare day.

    What's your experience? I tried building a couple of venturi units, with minimal success. The chip loader on my cheap Masterbuilt never worked well- - I'd get a chip flare-up, then no smoke 30 minutes later.

    The Masterbuilt folks now build an external (alleged) cold smoke generator with a feeder mechanism, but I haven't tried it. Have you? I'd like to hear how well it works.

    1. I had the same chip flare up problem with my Masterbuilt so I started using saw dust with much better results.

  2. I have a 40" masterbuilt glass door 2nd generation. The top vent is out the side. I built an elbow and up the side chimney. I use both amaze-n flat tray and the chip loader. Both have some downfalls. In MN we get humidity so I put the pellets in the microwave for a minute, to dry them out. I light the pellets with a little rubbing alcohol in the front end and a propane torch. On the chip loader I leave the chip loader out about an inch. If there is no wind 2" and more. I use a small amount of chips and babysit the smoker. Pitmaster pellets are a good all around flavor in my mind. Todd Johnson owns amaz-n smoker and is a great guy to talk to for information.   3. I have a 40" masterbuilt glass door 1st generation that I made the mailbox mod for and use the a-maze-n flat try in it. It works very good for the short time I have had the set up. I really like not having to worry about keeping chips always lit. So far I like the apple and pecan pellets the best.

  4. Yeah, the pellets stay lit nicely. I only had one "flame-out," during a rainy day in North Carolina. I've taken to loading the Amazin' (tubular) with pellets and putting it inside while preheating and drying. Then I pull it out (YEOW! It's hotter'n I remembered. Be sure to use tongs.), light it with a blowtorch, and when it gets going steadily, put it in. That's a great idea about the rubbing alcohol. I'll try it, next time.

  5. I learned the rubbing alcohol trick from Todd Johnson, Owner of a-maze-n pellet. As what I have read the round one works the best. I have the flat one though. Todd would be a good one to advertise here. When you get to it, I think
